Biltong and droewors are not simply products to be packaged: they are the result of a production process with specific moisture reduction targets, and the packaging decision is the final step that determines how long the product retains its quality after leaving the producer. Vacuum sealing biltong and droewors extends shelf life substantially compared to atmospheric packaging, but the interaction between product moisture content, bag material, and vacuum level is more nuanced than it is for fresh meat packaging. Getting these factors right is the difference between a product with a reliable commercial shelf life and one that develops off-flavours or moisture-related quality issues before reaching the end consumer.

Vacuum Sealing Dried Meat: Why Moisture Content Affects Seal Quality
Water activity is the relevant measurement for dried meat products, not moisture content by weight alone. Water activity (Aw) is a measurement of the available moisture in a food product, expressed on a scale from 0 to 1. Well-dried biltong typically has a water activity below 0.85, and products below this threshold are in the range where bacterial growth is significantly inhibited.
The moisture content of the product at the time of sealing affects the sealing process in two ways. First, a product that has not been dried to its target water activity will continue to lose moisture after sealing, causing the package to appear deflated over time and potentially accumulating liquid inside the package in high-moisture products. This does not indicate a seal failure but rather a product that was packaged before the drying process was complete.
Second, surface moisture on biltong or droewors at the time of sealing can affect seal quality if it contacts the bag opening during the sealing cycle. For fresh cuts or lightly dried product, this is a relevant concern. For correctly dried biltong at target water activity, the product surface should not carry enough free moisture to contaminate the seal area under normal handling.
Chamber sealers are the correct machine type for commercial biltong and droewors packaging. The vacuum cycle on a chamber sealer evacuates the space around the bag as well as inside it, which means that surface moisture on the product does not migrate toward the bag opening under the pressure differential that would occur with an external suction machine. Bag Selection for Biltong: Nylon Poly vs. Barrier Film
The two primary bag types used for commercial biltong and droewors packaging are standard nylon poly bags and barrier film bags. The choice between them depends on the target shelf life, the distribution environment, and whether the product is being sold in a context where oxygen ingress through the bag material itself is a concern.
Standard nylon poly bags used in chamber sealers are a co-extruded construction of nylon and polyethylene. Nylon provides puncture and tear resistance; polyethylene provides the heat-seal layer. These bags provide a good barrier to moisture and have acceptable oxygen barrier properties for shelf lives up to approximately 6 to 8 weeks under ambient temperature and normal handling conditions. For butchery retail operations where the product is sold relatively quickly after production, standard nylon poly bags are generally adequate.
High-barrier film incorporates an additional layer of EVOH or PVDC that substantially reduces the oxygen transmission rate through the bag material. For commercial biltong producers targeting extended shelf life, export markets, or formal retail distribution where product may sit on shelf for 3 months or longer, high-barrier bags are the correct specification. The additional cost per bag is offset by reduced wastage from premature spoilage and a wider distribution window.
Bag thickness affects both puncture resistance and seal quality. Thinner bags seal more easily but are more susceptible to puncture damage during handling, particularly for biltong with protruding fat or bone fragments. Thicker bags require correct seal time settings to achieve a full bond through the bag material.
For droewors specifically, the thinner diameter of the product means that bags can have a profile that tends to wrinkle at the seal area if the bag width is significantly larger than the product. Wrinkles in the seal area reduce the effective sealing surface and increase the risk of micro-leaks. Selecting a bag width appropriate to the product dimensions reduces this risk.
Shelf Life Extension for Commercial Biltong Producers Using Chamber Sealers
A chamber sealer operating at 99 per cent vacuum or greater, using a high-barrier bag, at the correct seal time and pressure for the bag material, and packaging a product at the correct water activity, will achieve a shelf life substantially in excess of atmospheric packaging. Exact shelf life depends on the specific product, water activity, storage temperature, and bag specification, but commercial biltong producers using this combination routinely achieve shelf lives of 3 to 6 months for products sold through ambient distribution channels.
The primary enemy of shelf life in vacuum-packaged biltong is residual oxygen inside the sealed package. A small oxygen partial pressure remaining after the vacuum cycle provides the conditions for fat oxidation to proceed, which produces the rancid off-flavour that characterises aged biltong. Maintaining pump performance to ensure the machine consistently achieves its rated vacuum level is therefore directly linked to product shelf life consistency.
A chamber sealer that has degraded pump performance, even if the machine appears to complete cycles correctly, will achieve a lower vacuum level than its rated specification. Product packaged on a machine with a pump achieving 95 per cent vacuum rather than 99 per cent will have a measurably shorter shelf life due to the higher residual oxygen content. This is not apparent from a visual inspection of the sealed package and is only identified through vacuum level measurement or through shelf life testing that reveals premature quality decline.
